Chicken in peanut sauce ^

2¼ | Llb chicken, quartered | |
1 | teaspoon | Sea salt |
½ | teaspoon | Pepper |
1 | tablespoon | Butter |
1 | cup | Coarsley ground peanuts |
2 | tablespoons | Whole wheat flour |
1 | cup | Diced carrots |
½ | teaspoon | Turmeric |
¾ | cup | Hot water |
2 | tablespoons | Chopped parsley |
Directions
Rub chicken pieces with salt and pepper. Melt butter in fry pan. Brown chicken well, then cover pan and cook gently for 40 minutes, turning once.
Sprinkle peanuts with flour, then add to chicken. Turn chicken pieces in peanut mixture. Add carrots, turmeric and hot water. Simmer 10 minutes more or until sauce thickens. Adjust seasonings, sprinkle with parsley nad serve.
