1 | Chicken breast, boneless, skinless, [=1/4 lb] | |

2 | teaspoons | Garlic, minced |
1 | teaspoon | Gingerroot, minced |
Directions
In measuring cup, stir together ¼ cup water, peanut butter, soy sauce, vinegar and hot pepper flakes.
Cut chicken into ½-inch cubes. in nonstick skillet, heat oil over medium-high heat; cook chicken, garlic and ginger, stirring, for 2-3 minutes or until chicken is no longer pink inside. Stir in peanut butter mixture and bring to boil; reduce heat to low and cook, stirring, for 3 minutes or until thickened.
Per Serving: about 280 calories, 32 g protein, 14 g fat, 7 g carbohydrate
