Chicken with artichokes ^

Ingredients

Quantity Ingredient
2 tablespoons Butter
4 Chicken breast halves
1 clove Garlic, minced
½ teaspoon Salt
¼ teaspoon Pepper
½ cup Chicken broth
¼ cup White wine
1 pack (10 oz) frozen artichoke hearts, thawed
1 tablespoon Cornstarch mixed with
1 tablespoon Cold water
2 tablespoons Lemon juice
3 Eggs, beaten
2 tablespoons Chopped parsley

Directions

Melt butter in heavy skillet. Brown chicken, then add garlic; saute for 3 minutes. Add salt, pepper, chicken broth and wine. Cover and simmer for 30 minutes. Add artichoke hearts and simmer, covered, for 10 minutes more. 4 servings.
