Chicken with lime and spices

4 | Chicken breast fillets | |
2 | tablespoons | Olive oil |
3 | tablespoons | Lime juice |
1 | teaspoon | Ground coriander |
1 | teaspoon | Ground cumin |
½ | teaspoon | Turmeric |
1 | tablespoon | Chopped fresh mint |
Directions
Cut the chicken fillets into 1½ cm strips.
Make the marinade by combining the remaining ingredients except the olive oil in a small bowl. Add the chicken and marinade for at least 7 hours but preferably overnight turning occasionally.
Drain the chicken and reserve the marinade.
Heat the olive oil in a medium pan; add chicken and cook over a high heat for 5-10 minutes or until lightly browned and tender; stir in the reserved marinade.
Serve the chicken strips with hummus rolled in pita bread.
