Chicken with sausage ^

Ingredients

Quantity Ingredient
3 tablespoons Olive oil
2 pounds Chicken pieces
4 Sweet Italian sausage links
1 medium Onion, sliced
1 large Green pepper,seeded and sliced
1 cup Sliced mushrooms
1 can (16 oz) Italian style plum tomatoes, broken up with fork
3 tablespoons Tomato paste
½ cup Red wine
1 teaspoon Basil
Pinch sugar
Salt and pepper to taste

Directions

Heat oil in heavy skillet. Fry chicken, a few at a time, until golden brown, turning frequently. Remove from skillet and drain on paper towels. Add sausages to skillet; prick with fork. Fry until well browned and thoroughly cooked, about 10 minutes. Remove from pan.

Discard all but 3 tablespoons drippings. Add onion, green pepper and mushrooms to skillet; saute for 5 minutes. Add tomatoes, tomato paste, wine and seasonings; stir well. Bring to a boil, then add chicken and sausage. Cover and simmer for 35-40 minutes. Transfer to serving dish and serve with plain pasta. 4 servings.
