Country chicken sausage

2 Feet small hog or sheep casings
2 pounds Chicken meat-15%fat
1 teaspoon Salt, or to taste
1 teaspoon Pepper
½ teaspoon Sage
½ teaspoon Ground thyme
½ teaspoon Ground ginger
½ teaspoon Summer savory
½ teaspoon Cayenne (optional)

Directions

Prepare casings. Grind the chicken through the fine disk; mix with remaining ingredients. Grind again and stuff. Twist off into 2-3" links. To cook, saute in oil until evenly browned and cooked through.
