Chicken-cheese tortillas

Ingredients

3 tablespoons Olive oil
1 medium Onion -- diced
1 Clove garlic -- minced
4 Skinless boneless chicken
Breast halves
4 ounces Green chiles -- chopped
1 Jalapeno pepper -- seeded &
Minced
½ teaspoon Ground cumin
½ teaspoon Salt
10 8\" flour tortillas
2 cups Monterey jack cheese --
Grated

Directions

Heat oil over medium high heat in a large skillet. Add onion and garlic and cook, stirring occasionally for 7 to 10 minutes, until onion begins to color. Meanwhile, cut chicken into small cubes. Add chicken, green chilies and pepper to the skillet. Sprinkle with cumin; increase the heat to high. Cook, stirring constantly, until chicken is opaque, about 1 to 2 minutes. Taste and add salt if needed. Remove from heat. Preheat the oven to 300. Warm tortillas.

Oil a 13 x 9 baking dish. Divide chicken equally among tortillas, spooning filling down the center of each tortilla; top with cheese.

Roll up to enclose filling; place in the oiled baking dish, seam side down. Cover baking dish with foil and bake until tortillas are heated through and cheese is melted, about 10 minutes.
