The cuisine of Honan Province, which is either included in discussions of norther Chinese cuisine or treated as a separate school fo cooking, is most famous for its sweet-and-sour fish.
However, Cantonese chefs readily welcomed the flavorful Honan sauces adn sweet-and-sour dishes into their own repertories, and thus it is with the Cantonese that we generally associate sweet-and-sour preparations.
