Chipotle tomato sauce

Ingredients

Quantity Ingredient
½ cup Chopped onions
1 tablespoon Minced garlic
½ teaspoon Whole oregano leaves
teaspoon Ground cinnamon
2 tablespoons Olive oil
cup Fresh or canned chopped tomatoes; with juice
cup Dry white wine
½ teaspoon Minced chipotle chile in adobo
2 tablespoons Chopped fresh cilantro

Directions

Saute the onions, garlic, oregano and cinnamon in the olive oil over moderate heat until soft. Add the tomatoes, wine and chipotle and cook uncovered for 15 to 20 minutes until thickened. Stir in the cilantro.

This recipe yields about 3 cups of sauce.
