Chipotle bbq sauce

Ingredients

Quantity Ingredient
½ medium Onion, minced
4 Cloves garlic, minced
1 tablespoon Bacon fat
28 ounces Catsup
8 Chipotles en adobo, minced
2 tablespoons (heaping) good chile powder
2 teaspoons Cumin
2 teaspoons Thyme
6 ounces Amber beer
½ cup Cider vinegar
2 tablespoons Prepared mustard
1 tablespoon Worcestershire
1 tablespoon Nuoc mam
¼ cup Bourbon
½ tablespoon Cocoa
Black pepper to taste

Directions

Saute onions and garlic on med high heat until soft. Add everything else.
