Cinnamon-orange chicken

4 Chicken filets
1 teaspoon Cinnamon
¼ teaspoon Nutmeg
2 teaspoons Olive oil
½ cup Onion; sliced
1 teaspoon Ginger
½ cup Orange juice
1 tablespoon Dried currants
1 tablespoon Capers; rinsed and drained

Rinse and dry chicken. Sprinkle with cinnamon and nutmeg. Heat oil in medium skillet over medium-high heat. Add chicken and cook for 3 minutes, or until lightly browned; turn chicken; add onion and ginger. Cook for 2-3 minutes, stirring frequently, until chicken is brown. Reduce heat; add orange juice, currants and capers. Cover and simmer for 7-10 minutes until chicken is thoroughly cooked. To serve, slice each chicken breast crosswise and spoon remaining sauce evenly over top. Makes 4 servings.
