Classic chicken risotto

Ingredients

2 tablespoons Butter
1 tablespoon Olive oil
1 medium Onion, finely chopped
2 cups Raw chicken, cubed
cup MAHATMA Rice
2 teaspoons Italian seasoning
cup Water
1 Bay leaf
2 HERB-OX Chicken Flavor Bouillon Cubes or
2 teaspoons HERB-OX Chicken Flavor Bouillon Instant Powder
4 tablespoons Freshly grated Parmesan cheese
1 tablespoon Finely chopped parsley

Directions

Heat butter and oil in a large saucepan. Saute the onion and chicken for 3 minutes. Add rice and Italian seasoning, cook for 2 minutes.

Add HERB-OX Bouillon cubes/instant powder, water and bay leaf. Bring to a boil. Stir once and lower heat to simmer. Cover and cook for 18 minutes until rice is creamy and liquid is absorbed. Remove bay leaf.
