Corn meal waffles

Ingredients

Quantity Ingredient
1 cup All-purpose flour, sifted
2 teaspoons Baking powder
1 teaspoon Baking soda
1 teaspoon Sugar
½ teaspoon Salt
1 cup Yellow corn meal
2 Eggs, beaten
2 cups Buttermilk
¼ cup Salad oil

Directions

Sift together dry ingredients, except corn meal. Stir in corn meal.

Combine eggs, buttermilk and oil. Stir into dry ingredients. Mix only enough to moisten all flour. Bake in preheated waffle iron.

Makes 8 to 10 waffles.

NOTE: Waffle thickness may vary with liquid content. For thicker waffles, reduce amount of liquid slightly.
