¼ | cup | Yellow cornmeal |
10 | To 12 oz catfish fillets, cut into 1-inch pieces | |
2½ | tablespoon | Vegetable oil |
2 | tablespoons | Fresh lemon juice |
1½ | teaspoon | Honey |
1½ | teaspoon | Dijon mustard |
½ | teaspoon | Grated lemon peel |
3 | cups | Mixed lettuces or mesclun |
¼ | cup | Thinly sliced sweet onion (such as Vidalia) or red onion |

Combine lettuces and onion in bowl. Add warm dressing and toss. Divide between 2 plates. Top with fish.
