Cornmeal-crusted catfish on mixed greens - bon appetit

Ingredients

Quantity Ingredient
¼ cup Yellow cornmeal
10 To 12 oz catfish fillets, cut into 1-inch pieces
tablespoon Vegetable oil
2 tablespoons Fresh lemon juice
teaspoon Honey
teaspoon Dijon mustard
½ teaspoon Grated lemon peel
3 cups Mixed lettuces or mesclun
¼ cup Thinly sliced sweet onion (such as Vidalia) or red onion

Directions

Place cornmeal in large bowl. Season with salt and pepper. Pinse catfish under cold water and shake off excess (do not pat dry). Toss fish in cornmeal mixture until well coated. Heat 2 T oil in large nonstick skillet over medium-high heat. Add catfish and cook until golden brown and cooked through, turning occasionally, about 6 minutes. Transfer to paper towels and drain. Add ½ T oil, lemon juice, honey, mustard and lemon peel to skillet and whisk until combined, about 30 seconds. Remove from heat.

Combine lettuces and onion in bowl. Add warm dressing and toss. Divide between 2 plates. Top with fish.
