Coronation chicken

Ingredients

pounds Cooked chicken, skinned
1 tablespoon Vegetable oil
1 Onion, chopped
2 teaspoons Strong curry paste
2 teaspoons Tomato puree
75 millilitres White wine or chicken stock
Juice of 1/2 lemon
8 ounces Can pineapple pieces,drained
3 tablespoons Greek yoghurt
225 millilitres Mayonnaise
3 ounces Seedless grapes, halved

Directions

Cut chicken into thin strips. Heat oil in small saucepan and saute onion for 3 mins or until soft. Add curry paste, tomato puree, stock or wine, and lemon juice. Simmer for 5 mins. Leave to cool. Puree half the pineapple in blender, strain off excess juice. In a large mixing bowl, mix together the yoghurt, mayonnnaise, pureed pineapple and curried onion sauce. Stir in chicken, grapes and remaining pineapple. Serve with rice salad and tortilla chips.
