Cranberry vinegar

1 | quart | White wine vinegar |
2 | cups | Fresh cranberries; divided |
4 | Cinnamon (3 inch) sticks | |
½ | cup | Honey |

10 | Wooden (6 inch) skewers |
Directions
Combine vinegar, 1 cup cranberries, and cinnamon in saucepan; bring to a boil. Remove from heat. Let stand for 2 minutes, stir in honey.
Using a citrus zesteror a knife, cut strips of rind from an orange. Place remaining cranberries and orange rind on skewers and divide evenly between bottles or jars. Strain vinegar mixture, discarding cranberries. Pour liquid over skewers in bottles. Store at room temperature for 2 weeks before using to let flavor develop.
Remove skewers from vinegar when used, as cranberries will spoil as vinegar level drops from use. Yields 4½ cups.
