Cream of cilantro soup

Ingredients

Quantity Ingredient
3 cups Plain yogurt
2 cups Loose-packed leaves cilantro
1 cup Half and half
½ cup Chopped green onion
1 tablespoon Minced fresh parsley
3 cups Chicken broth
Garnish sprigs cilantro
Freshly ground pepper

Directions

(Makes 2 quarts.) Blend yogurt, cilantro, half and half, onion and parsley in processor 15 seconds. Transfer to large container. Stir in broth. Refrigerate overnight.

To serve, ladle soup into bowls. Garnish with cilantro sprigs and pepper.
