Cilantro sauce

1 | Serrano or jalapeno chile | |
2 | cups | (about 2 bunches) cilantro leaves |
1 | teaspoon | Kosher salt |
¼ | cup | Fresh lime juice; (from 3 to 4 limes) |
⅓ | cup | Extra virgin olive oil |
Directions
Combine the garlic, chile, cilantro, salt and lime juice in a blender or food processor. Blend or process until the mixture forms a smooth puree.
Transfer to a small bowl, stir in the olive oil, taste, and adjust the seasonings.
Yield: About 1½ cups
