Creamy two potato crockpot soup

Ingredients

4 | mediums | Sweet potatoes; diced |
2 | mediums | Red potatoes; diced |
1 | large | Onion; diced |
4 | mediums | Carrots; diced |
6 | Cloves garlic; minced | |
Salt; to taste | ||
Fresh ground pepper; to taste | ||
49½ | ounce | Chicken stock |
8 | ounces | Velveeta cheese |
½ | cup | Cream |
Directions
In a 5 quart crockpot, combine potatoes, onion, carrots, garlic, salt, pepper and stock. Cook on low 10 to 12 hours. During the last 10 minutes of cooking time, stir in velveeta until melted, stir in cream and turn off crockpot. Cover and let sit until serving time. Makes 8 to 10 servings.
