Creamy two potato crockpot soup

Ingredients

Quantity Ingredient
4 mediums Sweet potatoes; diced
2 mediums Red potatoes; diced
1 large Onion; diced
4 mediums Carrots; diced
6 Cloves garlic; minced
Salt; to taste
Fresh ground pepper; to taste
49½ ounce Chicken stock
8 ounces Velveeta cheese
½ cup Cream

Directions

In a 5 quart crockpot, combine potatoes, onion, carrots, garlic, salt, pepper and stock. Cook on low 10 to 12 hours. During the last 10 minutes of cooking time, stir in velveeta until melted, stir in cream and turn off crockpot. Cover and let sit until serving time. Makes 8 to 10 servings.
