Crumby cauliflower

Ingredients

Quantity Ingredient
1 pack Frozen cauliflower; thawed and drained
3 tablespoons Margerine
¼ cup Flour
2 cups Milk
1 cup Shredded sharp Cheddar cheese
1 teaspoon Salt
¾ teaspoon Pepper
2 cups Stuffing mix; measured dry (I use Pepperidge Farm)
1 cup Water
4 tablespoons Melted margerine

Directions

1. Place defrosted cauliflower in greased oblong casserole dish. Melt the 3 tablespoons margerine in a saucepan. Stir in flour, and cook 1 minute.

Remove from heat, and stir in milk.

2. Return to heat and bring to a boil. Cook, stirring constantly, until thick. Remove from heat. Add cheese, salt, and pepper, and stir until cheese is melted and sauce is smooth. Pour sauce over cauliflower.

3. Combine stuffing mix, water, and 4 tablespoons margerine. Microwave for 2 minutes. Stir, then sprinkle on top of the cauliflower, pressing topping down into the cauliflower mixture.

4. Bake covered for 30 minutes at 350 degrees. Uncover, and bake an additional 10 minutes so topping will get crisp.

Notes: This is one of the recipes I tried during the blizzard in March, 1993 and it has become a family favorite. It looks like you really fussed when you didn't/ Great for an oven meal. Really stretches a box of cauliflower to serve about 6 people. This is also good when you use a combo of broccoli/cauliflower. It can be assembled to the baking stage and refrigerated until needed.
