Cucumber chicken pita sandwiches

¼ | cup | Cucumber; finely chopped |
½ | teaspoon | Dried dill weed |
¼ | teaspoon | Dried mint |
4 | larges | Pita bread |
4 | Lettuce leaves | |
6 | ounces | Thinly sliced fully cooked chicken breast |
1 | Tomato; thinly sliced | |
⅓ | cup | Feta cheese; crumbled |
Directions
A very refreshing, Greek-inspired pita wrap, great to serve on a hot day.
From a wonderful little checkout stand cookbook called, Dinner on the Double, by Better Homes and Garden.
First make dressing: Stir together yogurt, cucumber, dill weed and mint in a small bowl.
For each sandwich: place a pita round on a plate. Top with lettuce, chicken and tomato. Spoon dressing on top. Sprinkle with feta cheese. Roll up each pita and secure with toothpicks or wrap in foil. Serve immediately.
