Double-boiler polenta with italian sausage & tomato sauce

Ingredients

Quantity Ingredient
1 Recipe Double-Boiler Polenta
2 tablespoons Olive oil
1 pounds Sweet Italian sausage, cut into 3\" lengths
½ small Onion, chopped (3 tb.)
½ small Carrot, peeled and chopped
½ small Celery stock, chopped
1 can Whole tomatoes,(canned,16 oz.) juice reserved and tomatoes, chopped coarsely
Salt to taste
Freshly ground pepper to taste

Directions

1. Prepare Double-Boiler Polenta.

2. Meanwhile, heat oil in large saute skillet; add sausage and cook, turning occasionally, until browned on all sides, about 10 minutes.

3. Add onion, carrot and celery; saute over medium heat until vegetables soften, about 5 minutes. Add tomatoes with their juice; simmer gently until sauce thickens, about 20 to 25 minutes. Season with salt and pepper to taste.

4. Divide Polenta among 4 bowls; top each with a portion of sausage and tomato sauce; and serve immediately.
