Double-boiler polenta with italian sausage & tomato sauce

1 | Recipe Double-Boiler Polenta | |
2 | tablespoons | Olive oil |
1 | pounds | Sweet Italian sausage, cut into 3\" lengths |
½ | small | Onion, chopped (3 tb.) |
½ | small | Carrot, peeled and chopped |
½ | small | Celery stock, chopped |
1 | can | Whole tomatoes,(canned,16 oz.) juice reserved and tomatoes, chopped coarsely |
Salt to taste | ||
Freshly ground pepper to taste |
Directions
1. Prepare Double-Boiler Polenta.
2. Meanwhile, heat oil in large saute skillet; add sausage and cook, turning occasionally, until browned on all sides, about 10 minutes.
3. Add onion, carrot and celery; saute over medium heat until vegetables soften, about 5 minutes. Add tomatoes with their juice; simmer gently until sauce thickens, about 20 to 25 minutes. Season with salt and pepper to taste.
4. Divide Polenta among 4 bowls; top each with a portion of sausage and tomato sauce; and serve immediately.
