Double-chocolate chews - house beautiful

Ingredients

cup All-purpose flour
teaspoon Baking powder
¼ teaspoon Salt
4 ounces Unsweetened chocolate
cup Vegetable oil
1⅔ cup Sugar
4 larges Eggs
teaspoon Vanilla extract
teaspoon Almond extract
¾ cup Semisweet chocolate chips
¼ cup Confectioners' sugar, to garnish

Directions

In a medium bowl combine flour, baking powder and salt; set aside.

In the top of a double boiler, melt chocolate with oil, stirring occasionally with a wooden spoon. Remove from heat and stir in sugar.

Add eggs, 1 at a time stirring until blended. Stir in vanilla and almond extracts.

Pour the chocolate mixture into dry ingredients and stir until thoroughly mixed. Add chocolate chips. Cover dough and chill at least 1½ hours or up to 48 hours.

Roll chilled dough to form 1 ¼ balls. Space balls 2 inches apart on greased cookie sheets. Bake in upper third of preheated 350'F oven 11 to 12 minutes, or just until firm in the center. Remove from oven and let stand 1 minute; transfer cookies to wire racks to cool completely. Lightly dust cookies with confectioners' sugar before serving.

Store cookies in an airtight container up to 1 week or freezer up to 1 month. Makes about 3 dozen 2 ½-inch cookies.
