Egerdouce sauce

Ingredients

Quantity Ingredient
2 tablespoons Olive oil
3 ounces Onions, roughly chopped
1 ounce Each of raisins & currants
½ teaspoon Each salt, gournd ginger,
Mace & saffron
¼ teaspoon Ground cloves
½ cup Dry white wine
cup Wine vinegar
1 ounce Sugar
3 ounces Wholemeal or wholewheat
Breadcrumbs
cup Water

Directions

Gently cook the onions in the oil till they are solft. Add the fruit & spices & cook for a few minutes. Melt the sugar in the wine & venegar & add this to the onion & fruits. Simmer all toghether, covered for 15 minutes then process. Reutrn the mixture tothe pan & add the breadcrumbs & enough water to make a thick but not claggy sauce.

Adjust the seasoning to taste & serve with the roast meat.
