Eggless salad sandwich

Ingredients

Quantity Ingredient
½ pounds Firm tofu; mashed
1 Green onion; finely chopped
2 tablespoons Eggless mayonnaise
1 tablespoon Pickle relish
1 teaspoon Mustard
¼ teaspoon Ground cumin
¼ teaspoon Turmeric
¼ teaspoon Garlic powder
1 pinch Salt

Directions

Combine all ingredients and mix thoroughly. Serve on whole wheat bread with lettuce and tomato.

NOTES : Great on whole wheat pita with sprouts (broccoli) Use fat-free mayonnaise
