No-egg egg salad

Ingredients

¼ cup Finely chopped carrot
2 tablespoons Finely chopped green or red bell pepper
¼ cup Finely chopped celery (opt)
2 tablespoons Finely chopped green onion
1 teaspoon Turmeric
½ teaspoon Salt
½ teaspoon Black pepper
1 teaspoon Hot sauce
2 teaspoons Vinegar
1 teaspoon Mustard
1 tablespoon Soy mayonnaise (opt)

Directions

In a large bowl, mix ingredients together, and you're done. Makes 4 sandwiches or serves 6-8 as a dip.
