English muffins with grilled pineapple

3 Muffins
½ Fresh pineapple; peeled and cored
Lime juice to taste

Directions

Cut the pineapple into 6 slices about 2 to 3cm thick, grill lightly on one side until slightly golden, remove from grill pan.

Split the muffins in half.

Place one slice of pineapple grilled side down on top of each muffin half and sprinkle with a little lime juice. Put the muffins back under the grill and grill lightly.
