Fiesta black beans

1 Sweet green pepper; diced
1 Sweet red pepper; diced
½ cup Sliced red onions
3 Scallions; minced
1 Lime; juice of
1 tablespoon Snipped fresh cilantro
1 teaspoon Olive **l
1 small Jalapeno; minced

In a large bowl, combine the beans, green and red peppers, onions, scallions, lime juice, cilantro, oil and jalapeno. Serve immediately or chill until ready to serve. Servings: 4 Cal: 170, Fat: 1.6g (8⅖% of fat) this is with the oil, Fiber: 5.2g.

We just stuff this in tortillas with a little fat free sour cream and enjoy.
