Fiesta chicken and black beans

Ingredients

Quantity Ingredient
3 Boneless chicken breast halves; cut in strips, (up to 4)
1 can (15 -oz) corn; drained
1 can (15 oz) black beans; rinsed and drained
1 tablespoon Gound cumin
1 teaspoon Chili powder
1 Onion; halved and thinly sliced
1 Green pepper; cut in strips
1 can (14-oz) tomatoes; chopped
1 can (6-oz) tomato paste

Directions

Combine all ingredients; mix well. Cover and cook on low for 5 to 6 hours.

Garnish with shredded cheese, if desired. Serve with warmed flour tortillas, or over rice. Serves 4.
