Fish stew with tomato & parsley (zuppa di pesce)

Ingredients

6 | tablespoons | Olive oil |
1 | cup | Onion, chopped |
2 | larges | Garlic cloves, chopped |
⅔ | cup | Fresh parsley, chopped |
1 | cup | Tomatoes, chopped (1 medium) |
1⅓ | cup | Cold water |
⅔ | cup | Dry white wine |
2 | pounds | Fish fillets, mixed sea bass orange roughy, cod, snapper |
Directions
Heat oil in a large pot or dutch oven over med-high heat. Add chopped onion and garlic and saute for 4 minutes. Add parsley and stir for 2 minutes. Add tomato and cook for another 2 minutes. Add 1⅓ cups water and the wine and simmer 10 minutes to blend flavors. Add fish fillets cut into 2" pieces, simmer until fish is cooked through, about 10 minutes. Season to taste with salt & pepper.
