Fish with tomatoes

Plunge tomatoes into boiling water for a few seconds, then remove, cool and peel. Chop them finely. Add the garlic (I slice mine but many prefer to mince it) and the spices. Pour ¾ of this into a lightly oiled baking dish, top with the fish, sprinkle with the lemon juice and cover with the remaining tomato mixture. Bake at 350F for 30 minutes, check the fish for flakiness and, if it's not done, bake it in 10 minute increments until it's nicely cooked through.
