Flaky bites from goat's cheese

Ingredients

Quantity Ingredient
1 pounds Puff pastry; (cut into two
; pieces)
8 ounces Goats cheese - softened with a fork
18 Sun dried tomatoes in oil; drained and finely
; sliced
Salt and freshly ground pepper
1 Egg; lightly beaten

Directions

Pre-heat oven to 200C. Roll out each piece of pastry on a floured board.

Cut into 9 x 2½ inch pieces. Spoon 1 teaspoon cheese onto the centre of each and place slices of the tomatoes on top. Season well.

Brush the edges of each square with egg and pull up until they meet in the middle of the peak. Press corners together to secure. Repeat with all the squares.

Bake for 15 minutes until puffed up and golden.
