Goat cheese croutons

Ingredients

Quantity Ingredient
Olive oil
8 slices French or Italian bread, inch thick
Salt and freshly ground
Pepper
8 slices Goat cheese, 1/4-inch thick
1 tablespoon Fresh thyme leaves

Directions

Preheat the oven to 350 degrees. Brush both sides of the bread slices with olive oil and sprinkle with salt and pepper. Place the bread on a baking sheet and toast in the oven for about 4 minutes, turning once, until lightly browned. Top each crouton with a slice of goat cheese and sprinkle with thyme, salt and pepper. Set aside.

Yield: 8 croutons
