8 | slices | French or Italian bread, inch thick |

8 | slices | Goat cheese, 1/4-inch thick |
1 | tablespoon | Fresh thyme leaves |
Directions
Preheat the oven to 350 degrees. Brush both sides of the bread slices with olive oil and sprinkle with salt and pepper. Place the bread on a baking sheet and toast in the oven for about 4 minutes, turning once, until lightly browned. Top each crouton with a slice of goat cheese and sprinkle with thyme, salt and pepper. Set aside.
Yield: 8 croutons
