French-toasted banana sandwich

Ingredients

1 tablespoon Peanut butter (optional)
4 Slices whole grain bread
2 Bananas
2 Eggs
cup Milk
½ teaspoon Vanilla
Pinch each cinnamon and salt
2 teaspoons Butter

Directions

Spread peanut butter (if using) over bread. Slice each banana lengthwise into 4 pieces; sandwich between bread.

In pie plate, whisk together eggs, milk, vanilla, cinnamon and salt; add sandwiches, turning to soak up mixture.
