Fresh corn and sausage fritters

1 | cup | All-purpose Flour, sifted |
1 | teaspoon | Baking Powder |
1 | teaspoon | Salt |
⅛ | teaspoon | Pepper |
¼ | teaspoon | Paprika |
1 | cup | Sausage, cooked and crumbled |
1 | cup | Fresh Corn off the cob |
2 | Egg Yolks, beaten | |
2 | tablespoons | Milk |
2 | Egg Whites, beaten stiff | |
Oil, for frying |
Directions
Sift flour, baking powder, and spices together in a mixing bowl. Add sausage, corn, egg yolks, and milk; mix until blended. Fold in stiffly beaten egg whites. Drop by heaping teaspoonfuls into oil heated to 360 - 365 degrees. Cook 3 to 5 minutes, turning to brown on all sides. Drain on paper towels.
Makes about 24 fritters
