Fresh herb garlic dressing

Ingredients

Quantity Ingredient
6 ounces Lowfat silken tofu
¼ cup Freshly squeezed citrus juice; combine orange lime tangerine, etc or white wine
1 tablespoon Fresh herbs; chopped
2 tablespoons Rice vinegar
Extra virgin olive oil; to taste *
Salt and pepper

Directions

* Original was 2 tablespoons oil, but with the tofu and mild rice vinegar, you only need enough oil to flavor the dressing.

Makes about a cup.

Blend all ingredients in blender. Adjust seasoning as necessary. Add water, vegetable stock or wine to thin to your specifications. Let flavors marry for 1 hour. Toss with salad.

NOTES : Use your own favorite herbs. Mix and match with any variety of citrus fruits. Alter oil and vinegar ratio to suit your taste.
