Fresh herb garlic dressing

Ingredients

6 | ounces | Lowfat silken tofu |
¼ | cup | Freshly squeezed citrus juice; combine orange lime tangerine, etc or white wine |
1 | tablespoon | Fresh herbs; chopped |
2 | tablespoons | Rice vinegar |
Extra virgin olive oil; to taste * | ||
Salt and pepper |
Directions
* Original was 2 tablespoons oil, but with the tofu and mild rice vinegar, you only need enough oil to flavor the dressing.
Makes about a cup.
Blend all ingredients in blender. Adjust seasoning as necessary. Add water, vegetable stock or wine to thin to your specifications. Let flavors marry for 1 hour. Toss with salad.

NOTES : Use your own favorite herbs. Mix and match with any variety of citrus fruits. Alter oil and vinegar ratio to suit your taste.
