Fresh peach fritters

Ingredients

¼ | cup | Whole milk |
1 | cup | All purpose biscuit mix; (up to 2) |
1 | tablespoon | Lemon juice |
2 | tablespoons | Sugar |
¼ | teaspoon | EACH ginger AND salt |
2 | mediums | Peaches; peeled, pitted, and diced |

In a bowl, beat egg, add milk; stir in 1c biscuit mix. Add sugar, lemon, ginger, and salt. Stir in diced peaches. Add additional biscuit mix as needed until consistency of thick pancake mix. In a heavy skiller, heat 2-3 inches oil to 375 (or use a deep-fat fryer) Drop batter into hot oil by teaspoonsful; fry until golden brown on all sides. Drain on paper towels.
