2 tablespoons Olive oil
½ cup Black Olive Paste*

this is the last installment of the polenta recipes as found in The Frugal Gourmet Cooks Italian. this is a every interesting and informative book!! so if you love true "Italian" cooking i suggest getting this cookbook:> Cut 8 slices of the Hard Polenta into ⅜-inch thick pieces. Pan-fry the polenta in the oil until golden brown on both sides. Arrange 2 slices of the fried polenta on a plate and top qith about 1½ Tbsp of the olive paste. Garnish with parsley.
