Soft polenta with olives and feta

Ingredients

¼ cup Greek olives, chopped
1 teaspoon Olive oil
¼ cup Feta cheese,grated
2 tablespoons Parmesan cheese grated
1 cup Garlic, mashed
1 tablespoon Lemon juice,fresh
1 Just made recipe for soft polenta
Omitting the gorganzola cheese

Directions

Stir the olives, oil, feta, Parmesan, garlic and lemon into the hot polenta. Serve warm in shallow bowls, accompanied by a salad of interesting greens. Sauteed dark leafies like kale and chard are also a tasty side dish for the polenta.
