Soft polenta with olives and feta

2 | tablespoons | Parmesan cheese grated |

Omitting the gorganzola cheese |
Directions
Stir the olives, oil, feta, Parmesan, garlic and lemon into the hot polenta. Serve warm in shallow bowls, accompanied by a salad of interesting greens. Sauteed dark leafies like kale and chard are also a tasty side dish for the polenta.
