4 | Fillet steaks (4-6 oz each) | |
2 | ounces | Butter |
2 | tablespoons | Shallots; finely chopped |
¼ | pounds | Mushrooms; sliced |
½ | pint | Double cream |
¼ | pint | Irish Whiskey |
Salt | ||
Black peppercorns; freshly ground | ||
Garnish: finely chopped parsley |
Directions
Melt the butter over medium heat in a large frying pan. Add steaks and saute quickly, turning once. Time about 1½ minutes each side. Season with salt and pepper. Remove steaks to heatproof dish and keep warm. Add chopped shallots and mushrooms to frying pan, saute until shallots tender and mushrooms lightly browned. Add cream and Irish whiskey.
