Gelled cranberry and orange parfaits

2 | cups | Orange juice 500 mL |
⅓ | cup | Sugar 75 mL |
2 | tablespoons | Unflavoured gelatin; (2 envelopes) 25 mL |
¼ | cup | Cold water 50 mL |

Directions
Place cranberry juice, orange juice and sugar in a medium saucepan and stir. Warm gently.
In a small saucepan, sprinkle gelatin over cold water and allow to rest 5 minutes. Warm gently until just melted.
Whisk melted gelatin into warm orange juice mixture. Simmer one minute. Do not allow mixture to boil.
Pour about ½ cup/125 mL of the orange juice mixture into 8 large martini or parfait glasses or wide mouth Champage glasses. Refrigerate about 2 hours.
Place remaining mixture into a large mixing bowl and refrigerate this also for about 2 hours or until syrupy but not yet set.
Meanwhile, peel oranges from top to bottom peeling away any pith. Section oranges by cutting out sections between membranes.
Spoon into semi-set mixture in glasses. Pour in remaining mixture. If it has set too much, simply warm it over hot water for a minute. Refrigerate a few hours until set.
Top each with a strawberry and a sprig of mint.
