Golden corn fritters

Ingredients

Quantity Ingredient
1 cup Flour, self-rising
1 teaspoon Sugar
1 teaspoon Salt
½ teaspoon Pepper
2 Eggs; beaten
cup Corn, fresh; cut from cob about 3 ears
½ cup Milk
2 teaspoons Oil, vegetable
Oil, vegetable; hot

Directions

Combine first 4 ingredients in a large mixing bowl; mix well, and set aside.

Combine eggs, corn, milk, and 2 tablespoons vegetable oil; mix well.

Stir corn mixture into dry ingredients.

Drop mixture by rounded teaspoonfuls into vegetable oil heated to 375 degrees; cook fritters until golden, turning once.
