Grandaddy's green tomato pickle (mennonite)

Ingredients
Quantity | Ingredient | |

1 | gallon | Green tomatoes; sliced |
10 | mediums | Onions |
1 | tablespoon | Mustard seed |
2 | pints | Vinegar |
¼ | cup | Salt |
1 | cup | Sugar |
Directions
Slice tomatoes in thin slices; do not peel.
Slice onions in thin rings.
Place alternate layers of sliced tomato and onion in a crock, sprinkling each layer with salt. Cover with a plate and weight.
Let stand overnight. Drain off liquid in the morning and cover mixture with the syrup made by combining sugar, vinegar and mustard seed.
Cover and let stand 24 hours before using.
