Green beans with double sesame dressing

Ingredients

1 | pounds | Green beans, trimmed |
2 | tablespoons | Sherry vinegar |
2 | tablespoons | Soy sauce |
1½ | tablespoon | Peanut oil |
½ | tablespoon | Oriental sesame oil |
1 | tablespoon | Ground roasted sesame seeds (see page 40) |
¼ | teaspoon | Pepper |
Directions
DRESSING
1. To prepare dressing, combine the vinegar, soy sauce, peanut oil, sesame oil, sesame seeds, and pepper. Whisk or shake in a tightly covered jar until blended.
Can be prepared several hours in advance.
2. Steam the beans for 3-4 minutes, then plunge them in ice water.
DRain well.
3. Put the beans in a serving bowl, then toss with as mush of the dressing as you need to coat the beans. SErve.
Can be prepared up to 3 hours ahead.
