Grilled banana compote

2 | larges | Unpeeled bananas; cut in half |
1 | teaspoon | Vegetable oil |
1 | tablespoon | Unsalted butter |
¼ | cup | Brown sugar |
¼ | cup | Dark rum |
Splash Grand Marnier | ||
1 | teaspoon | Ground cinnamon |
½ | teaspoon | Ground ginger |
Orange zest; for garnish |
Directions
Rub the cold grill rack with oil, and light coals or start grill. Brush bananas with vegetable oil and grill for 2 to 3 minutes. Remove from the grill, peel, and cut into medium-size pieces. In a medium-size saute pan, heat butter until bubbling. Add brown sugar and bring to a boil. Add banana pieces and rum. Splash with Grand Marnier. Boil for about 1 minute. Add cinnamon and ginger; remove from heat. Serve warm over ice cream, garnished with orange zest.
