Grilled spam ensalada

Ingredients

1 can Spam luncheon meat - (12 oz); cut into 1/2\" strips
1 Onion; cut into wedges
3 JalapeƱo peppers; chopped
2 cups Sliced jicama
2 cups Peeled; sliced tart apples
2 cups Sliced zucchini
½ cup Oil
2 tablespoons Chi-Chi's hot salsa
1 tablespoon Vinegar
½ teaspoon Coarsely-ground black pepper

Directions

In skillet over medium-high heat, cook Spam, onion, and jalapeño peppers 7 to

10 minutes or until browned. In bowl, combine jicama, apple and zucchini. In small bowl, whisk together oil, salsa, vinegar, and pepper. Pour dressing over jicama mixture; toss to combine.

To serve, place vegetable mixture around warm Spam mixture.

This recipe yields 4 servings.
