Grilled spam ensalada

1 | Onion; cut into wedges | |
3 | JalapeƱo peppers; chopped | |
2 | cups | Sliced jicama |
2 | cups | Peeled; sliced tart apples |
2 | cups | Sliced zucchini |
½ | cup | Oil |
2 | tablespoons | Chi-Chi's hot salsa |
1 | tablespoon | Vinegar |
½ | teaspoon | Coarsely-ground black pepper |
Directions
In skillet over medium-high heat, cook Spam, onion, and jalapeño peppers 7 to
10 minutes or until browned. In bowl, combine jicama, apple and zucchini. In small bowl, whisk together oil, salsa, vinegar, and pepper. Pour dressing over jicama mixture; toss to combine.
To serve, place vegetable mixture around warm Spam mixture.
