---|---|---|
100 | grams | Plain flour |
2 | Free range eggs | |
1 | 300 millilit cream milk | |
25 | grams | Sugar |
50 | grams | Butter |
50 | grams | Fresh breadcrumbs |
100 | grams | Rich mincemeat |
Directions
Preheat the oven to 200C/400F/gas6.
Make a smooth batter of the flour, eggs, milk and sugar. Melt half the butter in a saucepan or frying pan and fry the breadcrumbs until golden.
With the rest of the butter, liberally grease a 20cm (8") diameter baking dish and scatter the breadcrumbs over the top. Using a teaspoon, drop small heaps of mincemeat all over the baking dish and carefully pour on the batter. Bake towards the top of the oven for 40 minutes.
This is best served warm, lightly dusted with icing sugar. Cream, ice cream, yoghurt or brandy butter can be served with it.
