Healthy fish chowder

Ingredients

2 | tablespoons | Margarine |
3 | tablespoons | Carrot; shredded |
2 | tablespoons | Celery; diced |
2 | tablespoons | Onion; minced |
3 | tablespoons | Flour |
3½ | cup | Skim milk; divided |
2 | cups | Baking potatoes; peeled and diced |
½ | teaspoon | Salt |
¼ | teaspoon | Pepper |
1 | pounds | Cod; cut in 1\" pieces Or Lean white Fish |

Directions
1. Melt margarine in a saucepan over medium heat; add carrot, celery and onion and saute 2 minutes.
2. Stir in flour; gradually add 2½ C milk, stirring constantly with a whisk.
3. Add potato, salt, and pepper and bring to a boil.
4. Reduce heat; and simmer uncovered for 30 minutes stirring occasionally.
5. Add fish and 1 cup milk; cook an additional 10 minutes or until fish is done.
6. Serve with oyster crackers.
