Herb butter roasted chicken

4-5 lb whole roasting chicken
¼ cup Butter or margarine, softened
1 teaspoon Rosemary leaves, crushed
1 teaspoon Salt
¼ teaspoon Pepper
2 eaches Tb chopped fresh parsley
1 teaspoon Minced fresh garlic

Directions

MAKES: 4 SERVINGS

Heat oven to 350~. Secure wings to body of chicken. stir together remaining ingredients. Rub chicken with butter mixture. Place on rack in roasting pan. Bake for 2-2½ hours or until fork tender. Source: Land O Lakes Treasury of Country Recipes Carolyn Shaw's Collection 11-1-94
