Herb-crusted flank steak

2 tablespoons Dijon mustard
½ teaspoon Minced garlic
¼ teaspoon Freshly ground pepper
teaspoon Tarragon
1 pounds Flank steak; trimmed of fat
cup Fresh bread crumbs
1 tablespoon Chopped fresh parsley
Broccoli rabe; okra or broccoli, (optional)

1. Heat broiler and broiler pan.

2. Combine mustard, garlic, pepper and tarragon in bowl. Spread half the mixture on one side of steak. Broil steak, mustard side up, 4 inches from heat source, 4 minutes. Turn meat over, spread with remaining mixture; broil 3 minutes more for medium-rare. Combine bread crumbs and parsley; pat evenly on meat. Broil 1 minute more. Let stand 5 minutes.

3. Slice steak thin, diagonally across the grain. Serve with sautéed broccoli rabe, okra or broccoli, if desired.
